Williamsburg’s Cafe Colette Gets a New Chef and a New Menu

Speaking ofFrench bistros in Williamsburg, Zeb Stewart of drink densHotel DelmanoandUnion Poolhas hired a new chef, Charles Brassard, to helm the kitchen at his other place,Cafe Colette. Brassard worked under Bill Telepan at Judson Grill, and was sous chef at Michael Lomanaco’sPorter House, and, more recently, atLittle Giant.
