David Chang and Jimmy Fallon have beengoodpalsfor a while, so the chef’sTonight Showappearance on Friday was all the more relaxed and funny. The pair chatted aboutMomofuku in D.C.and the newLucky Peach, but the main event was a hot-wing showdown that managed to scale new heights of absurdity including habañero paste, bird chili oil, and a giant syringe filled with Scotch Bonnet puree. As an added bonus, Chang also filmed a web-exclusive video in which he talks about the time he landed a great gig at an izakaya in Tokyo but promptly cut his finger with a giant cleaver.
